TLDR: There's some talent in the kitchen, but quality seems to be inconsistent, the portion sizes for some items quite tiny for the price. I think this place deserves something more like a 3.5, but am rounding up to 4 since truly excellent barbecue is still somewhat tough to come by up north. The nitty gritty: The brisket was delicious and by far the strongest offering on the menu, a really juicy, well marbled (but not overly fatty) portion with sauce on the side (as it ought to be) and a good amount of bark. It was good enough to eat without sauce at all, but just a gentle extra sprinkle of Maldon salt. We only received two slices instead of the three that some prior reviewers referenced -- and this was for $15 without a side or cornbread, etc.... It was of excellent quality, but seemed a bit steep for a casual, takeout experience. The ribs ($19) were nicely smoked, but trimmed with more fat left on than I prefer, and unfortunately served thickly slathered in Carolina Gold Sauce. I appreciate that the meat was smoked and bbq'd without sauce. But if Tejas chooses to serve the ribs with sauce on rather than on the side, it would be nice to have the ribs spend a few more moments in heat to caramelize / lacquer. Note that the sauce wasn't your eastern NC style vinegar and chili sauce (which I'll freely admit is my preference), but the sort of sweet, gloppy, yellow mustard-based South Carolina sauce, which in my view overwhelms all the nuances of well smoked meat. Pulled pork ($16) was pleasantly moist, but a touch too fatty and fatally flawed by the addition of way too much salt and sauce. A carrot souffle side ($6) was new to me and absolutely wonderful, only faintly sweet to my happy surprise, with a custardy or milk pudding-like consistency. Evidently, the dish originates from Georgia, but bucks the hyper sweet tendencies of many southern dishes of this nature (e.g. sweet potatoes in syrup topped with brown sugar and marshmallows). Potato salad ($5) was not a style I personally enjoy, made with lots of mayonnaise, potatoes that were still quite firm, red onion and small amounts of other things (egg? celery?). But I fully admit that this is a stylistic preference not necessarily a flaw in preparation. I'm partial to herby potato salads with vinegar and olive oil. Pinto beans ($5) were creamy, nuanced and complexly flavored, with no meat added that I could detect, so possibly safe for vegetarians. A few slices of good, possibly homemade pickles came with each protein, which helped cut the fat where necessary. The menu could really do with some real greens (e.g. kale, collard greens, cucumber quick pickles, etc,), as well!

Ordered for delivery and it arrived on time and was incredibly delicious -- the brisket and potato salad were outstanding, and the pulled pork was great as well! I enjoyed all the sauces they gave us, as well as the pickles. The best part may have been the brownie -- rich and fudgy all the way through. No lie, the rest of the week I was just thinking about buying more of that $3 brownie for dessert every day. When I checked the menu again later and saw that the brownie was actually gluten-free too? MINDBLOWN. Probably one of the best meals I've had all month, and am looking forward to ordering again soon!

4.5 / 5.0 - I've never has Tejas Barbecue in TX so I don't know what the original tastes like, but this one at the Wonder ghost kitchen exceeded my expectations. I ordered the Brisket ($17+) online and it was ready within 15 min. Pick-up was quick and easy and the staff was friendly. They also had a couple of tables inside for dining in. The Brisket was tender and delicious, with 3 slices and 3 different sauces. Happy to have a new tasty BBQ option in the neighborhood.
